Okay I’ll admit it I’m not a good cook, in fact far from it!

 

That’s why when some of you emailed me and asked for low carb recipes I said that I didn’t have any and gave you links to other low carb websites that had.

 

So what’s this about low carb recipes when I’m a lousy cook you may ask? Well, what I’ve done is trawled the internet and pulled together 10 fabulous low carb recipes that I think are definitely worth trying especially if you want some variety in your low carb or ketogenic diet.

 

These recipes are from other low carb recipe sites that have legions of followers and social media shares so they’ve got to be good.

 

Low Carb Pho (Vietnamese Beef Noodles)

I simply love Vietnamese food and pho definitely ranks high up on the list.

 

But the noodles of the original Vietnamese pho are rice noodles so that’s definitely out if you’re on a low carb or ketogenic diet. So Tasha from Ketogasm where I got the recipe from uses shirataki noodles instead.

 

For the uninitiated, these Japanese noodles are made from the konjac yam and the noodles compose largely of water and glucomannan a soluble fiber with negligible carbs.

 

Ingredients:

 

The Broth

  • Beef bones
  • Onions
  • Ginger
  • Salt
  • Fish Sauce
  • Star Anise

 

The Pho

  • Shirataki noodles
  • Flank steak
  • Bean sprouts
  • Lime
  • Thai basil leaves
  • Jalapeno peppers
  • Scallion

 

If you like pho a little spicy like me, you can always substitute the jalapenos with large green chili which takes the spiciness a notch higher.

Keto Egg Roll in a Bowl

Since I’m an ethnic Chinese, I love Asian food and this keto egg roll in a bowl recipe which incidentally is also from Tasha of Ketogasm, is no exception; this dish is probably a fusion between American and Chinese cooking. But who cares? As long as it tastes good and is healthy low carb, that’s all it matters right?

 

Ingredients

  • Ground pork.
  • Cabbage
  • Medium onion.
  • Sesame oil.
  • Soy sauce or liquid aminos.
  • Minced garlic.
  • Ground ginger.
  • Chicken broth.
  • Salt and pepper.
  • Green onion

Low Carb Pork Lo Mein

This is a classical Chinese dish, given the low carb twist by Mellissa Sevigny of I Breathe I’m Hungry.

 

Again, just like the low carb pho, shirataki noodles are used instead of the traditional noodles made from wheat so you can be assured that it’s low carb, gluten free and very healthy.

 

Ingredients

  • Pork sirloin, sliced thin (or chicken, beef, or shrimp)
  • Gluten Free Soy Sauce (Tamari)
  • Avocado oil (light olive oil or coconut oil will work)
  • Thinly sliced mushrooms
  • Shredded Savoy or Napa cabbage leaves
  • Sliced scallions
  • Sliced garlic
  • Shirataki noodles

 

For the Sauce:

  • Gluten free soy sauce
  • Sesame oil
  • Minced ginger
  • Rice wine vinegar (unseasoned, no sugar)
  • Granulated sugar substitute
  • Sriracha hot sauce
  • Hoisin sauce

This one is also by Melissa Sevigny of I Breathe I’m Hungry. It makes a fantastic side dish or small meal. Heck you can also have a couple of these poppers as your breakfast if you like, making it a very versatile and wholesome low carb bite size appetizer, side dish or snack.

 

Ingredients 

 

For the stuffed jalapeños:

  • Large jalapenos
  • Shredded cheddar cheese
  • Cream cheese
  • Chicken or turkey, shredded and chopped
  • Salsa verde
  • Garlic powder
  • Kosher salt
  • Cajun seasoning

 

For the breading

  • Pulverized pork rinds
  • Cajun seasoning

Low Carb Shrimp and Snow Peas

This one is another classical Chinese dish given a different twist by Mellissa Sevigny of I Breathe I’m Hungry

 

In the original Chinese version of the dish, there’s no sambal since this spicy condiment is of Malay and Indonesian origin. When you dip the snow peas and shrimp in sambal, the slightly spicy taste gives it a refreshing feel, making this dish great for the summer months.

 

On the other hand if you live in the tropics like me, you can have it virtually the whole year round.

 

Ingredients

  • Coconut oil
  • Sesame oil
  • Minced fresh ginger
  • Minced fresh garlic
  • Snow peas.
  • Gluten free soy sauce (or Paleo alternative).
  • 1 Sweetener (Swerve is recommended).
  • Fresh lime juice
  • Peeled and deveined raw shrimp
  • Sambal oelek or other chili paste (I personally prefer and use sambal belacan)

Low Carb Asian Meatball Noodle Soup

I like to try new traditional dishes that have been given a fresh new twist like this Asian meatball soup also from Mellissa Sevigny of I Breathe I’m Hungry

 

Fishball noodle soup has been a mainstay of Chinese cuisine for as long as I can remember because I grew up eating it. It’s commonly found in ethnic Chinese communities around the world.

 

So when I saw this different one that’s given a makeover from the traditional fishball noodles, I’m excited because it reminds me of another local Chinese noodle dish that I ate growing up – “dry” minced pork noodles i.e. without soup/broth but with lots of pork lard and homemade bird’s eye chili sauce. Again, Melissa uses shirataki noodles to curb carb intake.

 

Ingredients

 

For the meatballs:

  • Ground pork (or turkey)
  • 1 egg
  • Almond flour
  • Minced ginger
  • Chopped scallions
  • Gluten free soy sauce
  • Garlic powder
  • Kosher salt

 

For the broth:

  • Sesame oil
  • Minced ginger
  • Minced garlic
  • Chicken broth
  • Water
  • Gluten free soy sauce
  • Fish sauce
  • Red pepper flakes (I would prefer bird’s eye chili – it’s much spicier and gives that extra kick!)
  • Kosher salt

 

To assemble the soup:

This is another fabulous, delicious and pretty easy recipe for egg lovers from Lisa MarcAurele of Low Carb Yum. You can have deviled eggs as a meal – just add a salad with lots of olive oil – or as a side dish or appetizer. Whichever way you want to eat it, deviled eggs taste good!

 

Ingredients

  • Hard-boiled eggs, peeled and halved
  • Salt
  • Dry mustard
  • Pepper
  • Mayonnaise (home-made or organic)

Lisa MarcAurele of Low Carb Yum has got another winning recipe here and this one is on the national dish of the Philippines which is adobo.

 

I’ve eaten chicken and pork adobo many times when I used to fly to the Philippines regularly for business many years back. Now with this recipe you can just create your own low carb and healthy version of this delicious Filipino national dish!

 

Ingredients

  • Boneless chicken, cut into pieces
  • Olive oil
  • Apple cider vinegar
  • Soy sauce
  • Minced garlic

Stir Fry Chicken with Bok Choy

Here’s one of my favorite recipes from Lisa MarcAurele’s Low Carb Yum: chicken bok choy low carb stir fry.

 

I love stir fried bok choy and usually it’s just by itself or with shrimp and mushrooms so this one with chicken gives an interesting new taste to this perennial Chinese favorite.

 

Ingredients

  • Boneless and skinless chicken breasts
  • Egg yolks
  • Coconut flour
  • Tamari or soy sauce
  • Bok choy
  • Sliced mushrooms
  • Minced garlic
  • Sesame oil
  • Salt and pepper

So far all these 10 recipes that I’ve listed I’ve personally tried all of them although I’ve made some slight modifications in some of them especially those that are Asian in origin. For example I’m a sucker for very spicy food so many times I’d use sambal belacan as a dip for the Asian dishes and I’d add cut some bird’s eye chili and add to the broth for soup based dishes.

 

Please don’t try following what I do unless you’re also able to take extremely spicy food.
